It all begins in our scratch kitchen – the heart of the house – where imported semolina is plentiful and purposeful. This premium flour is re-milled several times, creating a more finely ground, amber-colored flour, ideal for making fresh pasta and breads.  This is the foundation of Strega’s fresh Spaghetti, Fettuccini and signature Cassarecci of which small batches are prepared daily. Next we roll thin sheets to cut and hand-fold into fresh raviolis stuffed with mixtures of imported cheese and fine meats - so delicious and deserving of their own delicate pocket.  And finally, our hand-cut potato gnocchi…tender pillows that simply melt in your mouth.  You can taste the love in each savory bite.

Strega’s secret-recipe sauces are next on the prep list.  The signature Pomodoro is rich with imported San Marzano tomatoes slow cooked for half the day and further seasoned with garlic, onion and fresh basil.  For the carnivores, our Strega Bolognese makes quite an impression - rich with pancetta, braised pork shoulder and Prime beef trimmings – enriched with plenty of Chianti!  Parmesan-Reggiano, foraged mushrooms, whipped Mascarpone and fine imported Extra Virgin Olive Oil from Sicily contribute to our many other sauces and signature dishes.  Complete with Saltimbocca Strega Style, Veal Chop Parmesan, fresh local seafood and USDA Prime hand-butchered steaks from our partners at Double R Ranch – the menu is Unapologetically Italian in every way.  Oh, and the Strega Meatball – our family secret blend of premium ground meats, homemade ricotta and rich Pomodoro – that’s all we can tell you!

And finally, the famous sweet finales at Strega are some of our most memorable moments.  In-house pastry chef Alex Bonefoi prepares each dessert masterpiece with passion and flare, daily, working with only the finest and freshest ingredients.  His Signature Torta Cioccolato, house-made Spumoni and rich Ricotta Cheescake will surprise and delight.  The Tiramisu and Vanilla Crème Brulee certainly won’t disappoint.  Save some room and charge up your camera….you’ll want to snap these Strega moments for sure!
